I want to change page menu item (change some wordings and hyperlink.)
I know that page menu file locate in /_master/Snippets/PageMenu.html

In this file I also find the variable called "%%GLOBAL_PageName%%" and "%%GLOBAL_PageLink%%".
But I cannot find any information about these two variables.
I want to know where do these two variables locate?
Can I change / edit these two variables?

They're referencing the SQL database for info on the page - i.e. it's name and if it's a link that needs displaying rather than a page written/saved to the database.

I don't think there are many reasons why you would change them.
